I have a redundant 2704N router I was hoping could be used to extend the wifi signal. I'm not super-techie and some of the info I've found is not basic enough for me. I understand it can't be done wifi but don't understand how I set it up through ethernet cable if I'm trying to reach a remote part of the house. I need a step by step guide if that's possible!

You cannot set it up to work as a wireless extender. You cab however set it up as a Wireless Access Point (WAP). The difference is that to work the WAP has to be connected to your router with an Ethernet cable.
So what precisely are you wanting to do with it?

I was just hoping to use it to get stronger signal in parts of the house not close to the router. So it sounds like I'd need a very long ethernet cable to do that?
We're finding the new fibre wifi through the new Hub One isn't as reliable as through the old router.

Try separating the 2.4 and 5GHz bands. See https://community.plus.net/t5/My-Router/2-4ghz-and-or-5ghz-best-practice/m-p/1351966#M840
