and when the DSL does resynch , the speeds are all over the place! Anywhere from just under 40Mb to over 60Mb.

As regards the SIP WAN ... messages, my guess (and its just a guess!) is that the SIP refers to the (non functional) voip functions.

I suspect there's a bit of the voip firmware still in there, and when the WAN connection goes up/down, the voip firmware is reset.

So, I got a text from 'Openreach' saying my service had been repaired and the 'speeds have improved'. However, the speeds are now just below 50Mbps when they used to be about 55Mbps. But they are above the 38Mbps that Plusnet have guaranteed, so I'm not sure I can complain.

No one contacted me so I don't think they will have read all of your kind advice and tech insight I'm afraid.

As I haven't had any further outages, I'm not sure what else I can do other than wait for another one to happen and go through all of this again.

Can you please post the router stats - speed and SNRM values.

That all looks good. SNRM is at the standard 6dB and the sync speed is over 50mbps.

Should the line remain stable over the next few weeks, you might see the DLM adjust the SNRM towards 3dB which will deliver a little more speed, but at the risk of instability.

This looks optimal for your line and I’d suggest is nothing to be concerned about. You might get a bit more raw speed but if that gives rise to an increase in error rates, then the usable speed will be lower due to retransmission over heads.
