Being a pedant ...
Given that this Bright box is being setup as a "slave" of a Plusnet Hub, there is no need to change the device's IP address to 192.168.1.2 - as this guide is for a SECOND BB slaved to another BB which would be using 192.168.1.1 already. Plusnet Hubs use 192.168.1.254
I would also recommend setting the WiFi SSID and passphrase to the same as that for the Plusnet Hub - thereby devices will roam seamlessly between the two WiFi access points.

Ok, so I've moved the ethernet cable from Port 2 to Port 4 of the Plusnet router, and then plugged the other end of the ethernet cable into the WAN port on the Brightbox. There's still not change though and my mobile is connected to Plusnet as that's the one I'm sat closest to, but is saying 'Connected without internet.'

You need to do the rest of the configuration on the Brightbox that I specified in the previous post https://community.plus.net/t5/Fibre-Broadband/Wifi-Query/m-p/1850308#M131277

Things are getting too complicated here - you need to break this issue down - ignore phones and wifi for the moment.
- Take the laptop which has an ethernet interface
- Turn its wifi off
- Get an ethernet cable
- Connect the laptop to one of the LAN ports in the Plusnet router
- Confirm it can connect to the internet
- Take the laptop and the ethernet cable and go to the BB2
- Plug the ethernet cable into one of the yellow ports
- Confirm that the laptop connects to the internet
- Report back
There is no point trying to connect over wifi until a wired device has proven that it can connect to the internet from both the Plusnet Hub and the EE BB2.

Without the rest of the configuration to set the BB2 into Bridge mode and disable DHCP its not going to work

Agreed, but that should not inhibit a device connected to the Plusnet hub from connecting to the internet. [Hmmm I guess that there are now two DHCP servers on the same subnet - one offering 1.254 as the gateway, the other 1.1 as the gateway ... it will somewhat unpredictable which a connecting client gets!!]
The bridge mode and disable DHCP needs to be done and then some verification that internet connectivity can be achieved from both "routers" before looking at the complexity of WiFi connections.

I think it might possibly be working...so I've disabled DHCP, changed it to ethernet and changing to bridging mode.
I'm now connected to Plusnet on my mobile phone, and Brightbox on my laptop, and all seems to be working absolutely fine.
The only thing I can't see is the Brightbox in my Wifi list on my phone - should I be able to, as I can see both Brightbox and Plusnet on the laptop, which is sat right next to my phone?

Happy that we've managed to get it working😀

Maybe the phone needs to refresh the wifi networks. Anyway, given the laptop works, it would seem to be a phone problem.
