There is nowhere in the setup for New Outlook that you can do that.
Microsoft seem to have pared back the things you can specify to an absolute minimum and make assumptions about how the server you are talking to is organised. For example they assume the server name based on your email address. You have to spot that and change it.

It may be that the almost empty folders relate to a default email account. I have one that is just my accountname whose email address resolves to accountname@accountname.plus.com, with my family members' individual email accounts in the form accountname+user1 (etc) which resolves to email address user1@accountname.plus.com (etc).
I can see from using webmail that there is only one email in the default account, one that says that due to inactivity (as I don't actually use the default) it has been archived.
It looks like it therefore might be possible to set up that one default account to work with New Outlook for Windows

The folders will be created as there is a default email address which in my case is accountname@accountname.plus.com. As I didn't ever use that, instead our family each had a secondary email address user1@accountame.plus.com, which requires setting up email clients with a username field accountname+user1 instead of the actual email address.
In my case the default email address only has one email in it, the one saying that due to inactivity it has been archived, but te folders are set up within New Outlook For Windows. There is no way to get it working with secondary email addresses.

Webmail only sees the mailbox you logged into.
Outlook can be configured to access any number of mailboxes, distinguished by the userID. For all Plusnet mail brands the email address may be used for the userID in place of account or account+mailbox.
In another browser tab, login into the Plusnet user portal BEFORE clicking the fault & ticket links
Superusers are not staff, but they do have a direct line of communication into the business in order to raise issues, concerns and feedback from the community.

Except that it doesn't work with New Outlook for Windows - it says "Sign in failed. Please try again in a few minutes. You may need an app password." Funnily enough the advanced setup does include a username field for the SMTP settings, but it is failing at the POP stage.

New Outlook is a bag or worms!
Every time one returns to the settings, they get changed to what NO thinks they should be - it needs a great deal of diligence to check the setting EVERYTIME one thinks only one element is being changed.

Turns out that it was Outlook more finicky with the port number and TLS setup - the settings used in K-9 Mail did not work with Outlook. You're right, just the email address is needed. Now to find a way to stop Outlook deleting messages on the server.....
