Which router are you using, and have you had text and/or email from PN confirming your FF connection is live?

Does the hub have a
single blue light across the middle - Hub One
or
a circle with blue lights at the top and bottom - Hub Two
You need to be testing using a ethernet wired connection for a true reflection of speed

Hub1 (lights across the bottom) or Hub2 (light in the centre)? See here for the difference: https://www.plus.net/help/broadband/router-setup-guides/
It is possible PN have not been informed of the job completion, therefore have not changed things at their end.
The engineer is from Openreach, not Plusnet, by the way.

This will help identify your router.

Unless the install was today where PN systems might need time to catch up you should get full speed almost immediately. There is no settling in period.
Did you order a Hub2 as part of the install?

8.60
Mbps download
6.48
Mbps upload
Latency: 8 ms
Server: London
Your Internet speed is fine.
Your Internet connection should be able to handle streaming an HD video. If multiple devices are streaming video at the same time, you may run into some congestion.

OK . Which speed tester did you use, because that is a load of bull? Which socket on the Hub is the Ethernet cable from the ONTplugged into? Check both ends are fully seated.

I'll have to wait and see if it settles down. Thanks

Can you reply to message #9 please?
Even without the notification from PN, FTTP connections should work as expected once they are properly completed.

Perhaps try switching off the new ONT for say 30 seconds, and then switch it back on ?.
Have you removed the old RJ11 VDSL modem cable from the master phone socket ?
.
